Fagor Splendid 6-Quart Pressure Cooker Review | fagor pressure cooker
NOTE: I found out later that Fagor Rapida model was the one sent to me instead of the Splendid I ordered (which is fine by me because Rapida is more expensive). I already have a Splendid 4-quart and I didn't find much difference between the two cookers except for the pot-belly shape of the Rapida.

1. Cooking with a pressure cooker
Think of a pressure cooker as a crock pot on steroids. The increased pressure inside the sealed vessel results in an elevated boiling point, producing a higher cooking temperature for faster cooking. The standard pressure for these cookers is 15 psi, raising the boiling point from 212f to 250f. Current design features considerably improve the safety of these pots over WWII vintage kitchen bombs.
Pressure cookers are perfect for pot roasts, stews, soups, stocks and long-simmering sauces, reducing cooking times by as much as seventy percent. Beans cook faster in a pressure cooker, although their soaking time is unaffected. Rice will cook faster, too, although the convenience of a dedicated rice cooker is beyond dispute.
Some pressure cookers let users select a second, lower pressure setting (8 psi, bp @ 215f), which yields considerably less accelerated cooking. Why slow down a high-speed cooker? Because some foods, like veggies and fish, cook quickly, and when cooked at 15 psi it is difficult to control doneness. (Recipes for these foods call for running cold water over the pot lid to quickly reduce the pressure and lower the temperature to stop the cooking. For more usual dishes, one would merely turn off the heat and let the cooking coast to a stop.) Pot-count or hubris may move some chefs to use their pressure cookers to prepare delicate foods regardless of the risk of under/over-cooking. The low pressure setting is intended to help these people. For most cooks, foods that cook quickly are better prepared using conventional methods. Arguably, a clever chef could use a pressure cooker as their only pot for all purposes, a desirable feature when living out of a knapsack on a desert isle where time is money or fuel is precious.
For most cooks, a pressure cooker will not be an essential kitchen utensil, but it is desirable for its ability to shorten long simmer times. An eight-quart pot is probably the most versatile size for most users, because the pot can only be filled to half or at most two-thirds capacity. If veggies are to be steamed rather than boiled, you will need a steamer insert. Expect a learning curve as you discover how to operate the pot and adjust cooking times. A pressure cooker should be stored unassembled, and the gasket (about $10) may need to be replaced occasionally. All parts should be hand washed. The the pot and lid are ruined if dinged where the gasket seats.

They also offer a trouble shooting guide and various home canning recipes in the manual.
Besides the manual Fagor presents each owner with a cookbook with over 50 recipes with instructions for cooking in the pressure cooker. Most of the recipe pages are backed with a place to write your way of cooking each recipe. There is also a section in the back for writing your own recipes.

This Fagor cooker has performed excellently. I have used it about 5 times so far. I cooked baby limas in it yesterday,in significantly less time than unpressurized cooking. Today, I used it twice...cooked fresh snap beans and carrots, then made vegetable soup.Everything was tender and well cooked, and the time and energy savings compared to regular cooking is well worth the price. I researched a number of pressure cookers, and you just can''t beat this 6 qt cooker for the price.

I have always been afraid of pressure cookers, fearing that they would BLOW UP! I went to a boat show & watched a demonstration on this pressure cookers & was totally impressed. So much so that I bought 2!
The pressure cooker is made of stainless steel with an extra thick bottom. The pot, itself, has a "clasp" on each side in which the cover is slipped under. These "clasps" prevent any chance of the pot "blowing-up". Under each "clasp" are the handles. The cover had a bar across the top which fits under the "clasps" on the pot, & there is a large knob in the center of this bar which you turn to seal the pot. This knob lifts the bar up to the clasps & shuts it tight to keep the pressure in. (I'm not an expert at technical writing, so I hope you understand what I'm trying to say!) To continue, there are two valves on top of the cover. The pressure valve and the safety valve from which steam escapes if the pressure builds up too much. The pot is all stainless steel except for the handles & the knob which are a heavy plastic.
What's great about this pot is that not only is it a true pressure cooker, but it is the ONLY pressure cooker that is rated for deep frying under pressure! Like broasted chicken. GOOD STUFF! It takes a little practice, but the skin turns out nice & crispy & the meat is sooooo tender!!
The bottom of the pot is so thick that I haven't had a problem with burning nor cleaning, yet it heats up great & does wonders with browning & sautéing. I even use this pot to make rice….in 6 minutes, brown rice in 20 minutes. No aluminum so you don't have to worry about Alzheimer's. You can even have stew in 20 minutes! These are now my main pots. I don't just use them for pressure cooking, either. I use it for EVERYTHING! I've made spaghetti sauce, browned bones, made stews, rice, soups, fish, whole chickens, broasted chicken, boiled pasta, osso bucco, rice pilaf, beef burgundy & more! It's GREAT!
Not all of this brands pressure cookers are the same. Some are not rated for broasting or deep frying under pressure and I haven't seen any other pressure cooker with these 2 "clasps" or "clamps" that ensures double protection from it supposedly "blowing up". I'm not afraid of pressure cooking, anymore. I think pressure cooking is the only way to go! Especially these days when we come home exhausted from working all day. Just throw in some chicken, some vegies, a little wine, close the pot & screw it down tight, turn on the heat, when noise comes out of the pressure valve, turn it down to low & let it go for 15 minutes. Can't be any simpler or faster than that for great fresh food!

I've had my Fagor Classic Pressure Cooker for six years now, and I found it to be very practical in the kitchen!
I saw this unit demonstrated at the New England Home Show in Boston for many years now. I wanted it when I first saw it, but I was always skeptical about buying it. Not that I was afraid of using a pressure cooker. I've own a 4-qt. Presto unit for years until it was stolen. Stolen? Yes, people will even steal those too, especially if they are drug addicts looking for a quick " fix "! My mother owned a 6-qt. Presto unit for years also.
Finally, in '97, I decided that I was getting one of these Fagor pressure cookers and I bought the six-qt. model. Show-Me Products is the company that demonstrates & sells these units at the home show. They are available in four sizes that I know of; 4-qt., 6-qt., 8-qt. & 10-qt. sizes, all designed to meet the size of your family's needs!
After buying the 6-qt. unit, I took it home and tried it for the first time. I thought: "Wow!! This pressure cooker is great!
I started with the same dishes that my mother used to make in hers!! Stuff like collard greens, stewed chicken, pot roast,short ribs of beef, stews, dried beans and the like. Great results! Then I tried some of the things that can't be done in the Presto unit, like pressure frying, dry-roasting & pressure steaming. I pressure-fried some chicken, dry roasted a whole chicken & beef roast and pressure-steamed corn-on-the-cob! All with excellent results!
